Fish

Many of you know I don't eat meat. I still eat fish though, depending on how it is caught or raised. A topic for another day I suppose. Our local grocery store sells packaged tilapia/rock fish/catfish that we are able to keep in our freezer. Each pack comes with 1-2 small fillets. We love them. They are easy to cook and go well with many types of meals.

Fish Burrito Night: refried beans, guacamole, sour cream, diced onions and tomatoes, and the fish! Served with a side of warm tortillas



Open-Faced Fish Sandwiches: Toasted french bread, cole slaw, slices of cheese (my fav is the pepper-jack w/ jalapeno), fish that is shredded and tartar sauce on one side.


Fish Parmesan: No picture... I guess we ate it too fast! Trevor made home-made pasta sauce and we seasoned the fish with Italian spices and grated fresh parmesan over the top. Delicious!

So many wonderful meals can be made with these affordable and easy to prepare fish fillets.
